Easy Fried Egg with Kale or Spinach
Serves: 1
  • Olive oil
  • 1-2 eggs
  • Handful of kale or spinach leaves, washed and torn
  • Whole-grain toast (optional)
  1. Warm the olive oil in a small skillet.
  2. Add egg(s) to the pan and reduce temperature to medium-low.
  3. Add the kale (or spinach) leaves to the pan and cover with a lid.
  4. Cook for 1-2 minutes, depending on how firm you like your yolk.
  5. Serve as is, or on whole-grain toast.
